Liver with Onions in Olive Oil

  1. 1Wash the liver and cut into medium pieces. Pat dry with paper towel.
  2. 2Heat olive oil in a pan. Add onion and cook until softened (5 minutes).
  3. 3Add the liver and raise the heat. Stir-cook for 6-8 minutes.
  4. 4Season with salt, cumin, and pepper only in the last 2 minutes (salting too early toughens the liver).

Tips

💡Don't overcook — liver gets tough. A slightly pink interior is ideal.
