Oven-Baked Potato with Cheese and Cream

  2. 2Wrap each potato in parchment paper, then in foil.
  3. 3Place in a hot oven at 200°C for 30–40 minutes until tender.
  4. 4Take them out, then either open them up or peel them.
  5. 5Mash thoroughly with a fork.
  6. 6Add the cheese, qishta, butter (or olive oil), and salt. For extra flavor, mix in za'atar, sliced olives, or corn.
  7. 7Mix everything together well.
  8. 8Transfer the mixture to a baking dish.
  9. 9Sprinkle a little extra cheese on top.
  10. 10Return to the oven and turn on the broiler until the top is golden.
  11. 11Serve with bran bread, corn, or olives.
